Eggplant Casserole - cooking recipe

Ingredients
    2 medium eggplant
    1 large onion, chopped
    1 pkg. bacon
    2 cans diced tomatoes
    1 lb. Colby cheese, diced
    1 small bag shredded Mozzarella cheese
    1 can bread crumbs
Preparation
    Peel eggplant and cut into small dices.
    Parboil until soft. Drain.
    Cut bacon into small pieces and fry.
    Drain.
    Mix all ingredients together in 9 x 13-inch baking dish.
    Cover with bread crumbs.
    Bake at 350\u00b0 for one hour.
