Quick Potato Fudge - cooking recipe

Ingredients
    3 sq. bitter chocolate
    3 Tbsp. butter
    1/3 c. mashed potatoes
    1/8 tsp. salt
    1 tsp. vanilla
    1 lb. confectioners sugar, sifted
Preparation
    Melt chocolate and butter over hot water in a double boiler. Add mashed potatoes, salt and vanilla.
    Mix thoroughly.
    Blend in confectioners sugar.
    Knead until smooth.
    Press into a buttered 8-inch square pan.
    Cool.
    Remove and cut into squares.
    Yields 1 1/4 pounds.
