Fish Sandwich With Orange-Ginger Mayonnaise - cooking recipe

Ingredients
    4 fresh or frozen fish fillets (such as cod, orange roughy or pike; 1/4 to 1/2-inch thick; about 1 lb.)
    2 Tbsp. butter
    1/4 c. fine dry bread crumbs
    1/4 tsp. ground ginger
    1/8 tsp. salt
    1/8 tsp. ground red pepper
    4 hamburger buns or kaiser rolls; split
    lettuce leaves
    1 recipe Orange-Ginger Mayonnaise
Preparation
    Melt butter.
    In small bowl combine bread crumbs, ginger, salt and red pepper; set aside.
    Place fillets on waxed paper.
    Brush tops and sides with melted butter.
    Coat tops and sides with crumb mixture.
    Crumb side up place in 8 x 8 x 2-inch microwave-safe dish.
    Cook uncovered for 4 to 7 minutes on High or until fish flakes.
    Give dish 1/2 turn after 3 minutes.
