Yellow Squash St. Tammany - cooking recipe

Ingredients
    2 lb. yellow squash, sliced
    salt and pepper to taste
    1 can cream of chicken soup
    1 (2 oz.) jar pimento
    2 carrots, grated
    1 onion, chopped
    4 oz. sour cream
    1/4 c. margarine
    1 box Stove Top stuffing (chicken)
Preparation
    Saute onion and carrot in margarine until soft.
    Cook squash; drain and mash.
    Add salt and other ingredients, except for dry bread crumbs from stuffing mix.
    Mix.
    Layer vegetable mixture and dry bread crumbs.
    Bake at 350\u00b0 until top crumbs are brown.
