Cold Eggplant Appetizer(Microwave) - cooking recipe

Ingredients
    1 eggplant (1 lb.)
    1 small onion, minced
    1/2 medium green pepper, minced
    1 clove garlic, minced
    1 tsp. lemon juice
    1/4 tsp. salt
    1/8 tsp. pepper
    1 c. plain yogurt
Preparation
    Rinse eggplant and place on microwaveproof roasting rack. Pierce skin in several places.
    Cook on High for 6 to 7 minutes, or until soft.
    Set aside to cool.
