3 c. sifted all-purpose flour
1 tsp. salt
1 tsp. baking soda
1 1/2 c. vegetable oil
2 c. sugar
3 large eggs
1 Tbsp. vanilla
4 1/2 tsp. ground cinnamon
1 c. diced pecans
1/2 tsp. ground nutmeg
3 c. peeled diced apples
Preparation

Preheat oven to 350\u00b0.
Grease and flour loaf pans (one 9 x 5-inches, two 8 x 4-inches or six 5 x 3-inches).
Sift flour, salt and soda; set aside.
In a large mixing bowl beat oil, sugar, eggs, vanilla, cinnamon and nutmeg until well blended.
Add dry ingredients and mix until smooth.
Fold in apples and pecans. Divide batter evenly among desired pans.
Bake in the center of 350\u00b0 oven for one hour or until tested done.
Decorate with glaze.
