Spicy Eggplant Casserole - cooking recipe

Ingredients

1 pkg. cornbread, prepared and crumbled
2 large eggplants, peeled and cubed
1 large onion, chopped
3 cloves garlic, chopped (optional)
1 pkg. Jimmy Dean hot sausage or other brand
1 can Mexican corn, drained
1 can evaporated milk
1/2 c. Monterey Jack cheese
1/2 c. Jack cheese
1/2 c. Cheddar cheese

Preparation

Prepare the packaged cornbread according to directions.
Cool and crumble in bowl.
