Confetti Fettuccine - cooking recipe

Ingredients
    1/2 c. olive oil
    1 large chicken breast, skinned, boned and cut into julienne strips
    1 large onion, coarsely chopped
    1 sweet red pepper, cut into julienne strips
    1 sweet green pepper, cut into julienne strips
    2 cloves garlic, minced
    1 tsp. red pepper flakes (or less)
    salt to taste
    2 large ripe tomatoes, seeds and core removed
    1 lb. cooked fettuccine
    freshly grated Parmesan cheese
Preparation
    In large high sided saute pan, heat 2 tablespoons of the oil. Add chicken strips and saute, stirring constantly until chicken pieces whiten, 1 to 2 minutes.
    Using a slotted spoon, remove chicken from pan and set aside.
