Eggplant Casserole - cooking recipe
Ingredients

1 medium size eggplant
1 beaten egg
1/2 can mushroom soup
1 small onion, chopped
1/2 c. celery, sauteed or cooked
10 Ritz crackers
1/2 c. grated Cheddar cheese
Preparation

Pare eggplant; cut into 1-inch cubes.
Cook eggplant, onions and celery in boiling, salted water for 8 minutes.
Drain in colander.
Add egg and cheese to celery, onions and eggplant.
Mix in crumbled Ritz crackers and soup.
Place in greased baking dish. Top with crumbs.
Bake in oven at 350\u00b0 for 30 minutes.
