Carrot Cake - cooking recipe

Ingredients
    2 c. flour (all-purpose or unbleached all-purpose)
    2 c. sugar
    2 tsp. baking soda
    2 tsp. cinnamon
    1 tsp. salt
    1 1/2 c. cooking oil (Crisco or Wesson)
    4 eggs
    3 c. grated carrots
    1 tsp. vanilla
    1 c. raisins
    1 c. chopped nuts
    1 (8 1/2 oz.) medium can crushed pineapple, drained
    2 handfuls shredded coconut
Preparation
    Mix all ingredients.
    Grease and flour pan.
    Bake in 9 x 13-inch pan for 65 minutes at 350\u00b0.
    Remove cake from pan after 10 minutes.
    Cool and top with cream cheese frosting.
