Stuffed Yellow Squash - cooking recipe
Ingredients

6 whole yellow squash
1 lb. ground meat
2 eggs
1 medium onion, chopped
2 c. cooked rice
1 c. cracker or breadcrumbs
1 tsp. salt
1/4 tsp. black pepper
grated cheese
Preparation

Boil whole squash until tender.
Cool.
Cut in half lengthwise. Remove insides and mix with meat, eggs, onion, rice, breadcrumbs, salt and pepper.
Lightly sprinkle squash with salt.
Stuff squash with mixture and top with cheese.
Bake at 375\u00b0 for 40 minutes or until meat is done.
