Canadian Cheese Soup - cooking recipe

Ingredients
    1/4 c. butter
    1/2 c. finely chopped onion
    1/2 c. finely chopped carrots
    1/2 c. finely chopped celery
    1/4 c. flour
    1 1/2 Tbsp. cornstarch
    1 qt. milk
    1 qt. chicken broth
    1/4 tsp. soda
    2 c. Velveeta cheese
    1 c. grated Cheddar cheese
    1/2 tsp. salt
    1/4 tsp. pepper
    2 Tbsp. parsley, chopped
Preparation
    Melt butter
    in
    pot.
    Add
    onions, carrots and celery. Saute until
    soft.
    Add
    flour
    and
    cornstarch and cook until bubbly. Add stock and milk and make a smooth sauce.
    Add soda and cheese. Season
    with salt and pepper.
    Add parsley before serving.
