1000 Island With Beets - cooking recipe

Ingredients

1 c. mayonnaise
1/4 c. sweet pickle relish
1 Tbsp. chopped onion
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. pureed beets

Preparation

Blend all of the above in a blender.
This makes the most beautiful color of pastel lavender you have ever seen.
Not only is it a beautiful dressing, but it's also quite tasty.
Makes 1 1/2 cups.
