Ultimate Quesadillas - cooking recipe

Ingredients
    1 red onion
    4 tsp. vegetable oil
    1 Tbsp. sugar
    2 c. shredded cooked chicken
    2 (10 oz.) cans Ro-Tel diced tomatoes and chilies
    2 c. shredded Mexican Four Cheese Blend
    6 (8-inch) flour tortillas
    8 oz. sour cream
Preparation
    Cook onion in 2 teaspoons hot oil over medium heat until onion is caramelized (about 25 minutes). Stir in sugar and cook 1 minute. Spoon 1/3 cup chicken, 1 tablespoon onions, 1 tablespoon tomatoes and green chilies and 1/3 cup cheese on each tortilla; fold in half. Cook in remaining oil from onions for about 3 minutes on each side or until browned and cheese is melted. The tortillas can be cooked several at a time.
