Nantucket Morning Glory Muffins - cooking recipe

Ingredients
    4 c. flour
    2 1/2 c. sugar
    2 tsp. baking soda
    4 tsp. cinnamon
    4 c. diced apples
    1 c. raisins
    1 c. nuts
    1 c. coconut
    1 c. grated carrots
    6 eggs
    1 c. oil
    4 tsp. vanilla
Preparation
    In a large bowl, sift together flour, sugar, baking soda and cinnamon.
    Stir in apples, nuts, carrots, raisins and coconut.
    Mix well!
    (Also works to hold fruit and nuts out to stir into wet ingredients.)
    In a separate bowl, beat just until smooth the eggs, oil and vanilla.
    Combine with flour mixture; stir only until dry ingredients are moistened.
    Spoon into greased or lined muffin pans.
    Fill 2/3 full.
    Bake at 350\u00b0 for 35 minutes.
