Harold'S Sweet Potato Pie - cooking recipe
Ingredients

1 to 1 1/2 c. cooked and mashed sweet potatoes (cut fresh peeled potatoes into 1-inch cubes and boil in water, drain well before mashing)
3/8 c. white sugar
3/8 c. dark brown sugar, packed
1/2 tsp. salt
2 1/2 tsp. pumpkin pie spice
1 tsp. vanilla extract
3 eggs, slightly beaten
1 1/4 c. whole milk
6 oz. canned evaporated milk
Preparation

Whisk together potatoes, sugars, salt, spice and vanilla. Blend in eggs and both milks.
Place pie dish on baking sheet and carefully pour mixture into 9 or 10-inch pie shell.
Bake at 375\u00b0 for about one hour, periodically checking the pie crust doesn't burn.
(Cover crust with foil if it browns too much.)
Pie is done when fork inserted into center of pie comes out clean.
Serve warm, with vanilla ice cream or whipped cream.
