Apricot Sweet Potatoes - cooking recipe

Ingredients
    1 large can sweet potatoes, drained
    1 c. brown sugar
    1 1/2 Tbsp. cornstarch
    1 tsp. orange peel
    1/4 tsp. salt
    1/8 tsp. cinnamon
    1 can apricots, drained
    2 Tbsp. margarine
    1/2 c. pecan halves
Preparation
    Preheat oven to 375\u00b0.
    Grease baking dish with margarine. Arrange sliced potatoes in dish.
    Mix sugar, cornstarch, orange peel, salt and cinnamon in heavy 1-quart saucepan.
    Stir in apricot nectar and 1/3 cup water.
    Cook and stir over medium heat until mixture comes to a full boil.
    Remove from heat and stir in margarine and apricots.
    Pour over potatoes, sprinkle with pecans. Bake, uncovered, 25 minutes or until hot and bubbly.
