Ingredients

1 egg, beaten
2 Tbsp. vegetable oil
1 c. buttermilk
1/2 c. whole wheat flour
1/2 c. all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
1/3 c. packed brown sugar
1/2 c. plus 2 Tbsp. quick cooking oats
Preparation

In a mixing bowl, combine egg, oil and buttermilk.
Combine flours, baking soda, salt and sugar; add to egg mixture, stir in oats.
Pour in 1/3 cupfuls onto lightly greased hot griddle.
Turn when bubbles form on top of pancakes.
