Breakfast Beans(Why Not) - cooking recipe

Ingredients
    1 lb. dry baking beans (your choice)
    1 lb. mixed dried fruits (at least half prunes, apricots, apples and peaches are good too), finely chopped
    1/4 to 1/2 c. pure maple syrup
    1 small peeled onion, studded with 2 cloves
    generous pinch of each ground ginger and cinnamon
    1 heaping Tbsp. spicy brown mustard (prepared)
    2 Tbsp. balsamic or other aromatic vinegar
    1 tsp. salt
Preparation
    Rinse and pick over beans. Soak beans in water to cover for 4 hours. Drain. Add water to cover and simmer about 1 hour.
    Mix beans with other ingredients in a large casserole with tight fitting cover. Add enough water to cover beans well. Bake, covered, in a 350\u00b0 oven for 4 to 5 hours until beans are soft and most of the liquid has been absorbed. Stir mixture every hour during cooking. Add boiling water as necessary if beans become dry.
