Sunshine Carrots - cooking recipe

Ingredients
    3 c. sliced carrots
    2 Tbsp. margarine
    1/4 tsp. grated lemon peel
    1 Tbsp. sugar
    1 Tbsp. lemon juice
    1 tsp. fresh parsley, chopped
Preparation
    Cook carrots in boiling water until tender; drain well.
    Add sugar, margarine, lemon juice and lemon peel.
    Heat and stir until the margarine is melted.
    Stir in parsley.
    Serves 6 (1/2 cup per serving).
