Pina Colada Fruit Salad - cooking recipe
Ingredients

1/4 c. shredded coconut
1 c. low-fat banana yogurt
1/4 c. pineapple juice
2 tsp. rum extract
1 Tbsp. coconut cream (optional)
3 c. fresh or canned fruit of choice
Preparation

Combine coconut, yogurt, pineapple juice, rum extract and coconut cream in a small glass bowl.
Stir to blend.
Fold in fresh or canned fruits just before serving.
Yields about 6 servings.
