Spinach Dip - cooking recipe

Ingredients
    1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
    3/4 c. 1% low-fat cottage cheese
    1/2 c. low-fat sour cream
    3 Tbsp. reduced-calorie mayonnaise
    1 Tbsp. lemon juice
    2 tsp. extra spicy salt-free herb-and-spice blend
    1/4 c. chopped red bell pepper
Preparation
    Place spinach on paper towels and squeeze until barely moist; set aside.
    Position knife blade in food processor bowl.
    Add next 5 ingredients; process until smooth.
    Add spinach and bell pepper; process until pepper is finely minced.
    Spoon into a bowl, cover and chill.
    Serve with plain crackers or carrot sticks.
    Yields 2 cups (about 16 calories per tablespoon).
