Chicken Purlow - cooking recipe

Ingredients
    1 extra large hen (about 5 to 6 lb.)
    2 lb. 1/2-inch sliced smoked sausage
    1 large red onion, diced
    1 large bunch green stalk onions, chopped with greens
    3 Tbsp. sweet butter
    1 Tbsp. salt
    1 tsp. black pepper
    1 large green pepper, diced
    1 lb. full grain rice, uncooked (do not use broken or cracked rice; rinse prior to use)
    1/2 gal. water
Preparation
    This is a full course meal in one dish; great for a cold winter night or a full blown gospel tent meeting.
