Red Bean Chili Dip - cooking recipe

Ingredients
    2 Tbsp. salad oil
    1 small onion, chopped
    1 clove garlic, crushed
    1 tsp. ground red pepper
    1 tsp. ground cumin
    1 Tbsp. tomato paste
    1 Tbsp. red wine vinegar
    2/3 c. red kidney or pinto beans, cooked for 1 1/2 hours
    1/2 c. cream cheese
    1/2 c. grated sharp Cheddar cheese
    salt and pepper to taste
Preparation
    Heat the oil in small pan.
    Add the onion and garlic.
    Fry gently for 4 minutes.
    Add the spices and fry for 1 minute.
    Stir in tomato paste and vinegar.
    Leave to cool.
    Place the beans, cheese and onion mixture in a blender or food processor.
    Work until the consistency of thick mayonnaise.
    Add a little water if necessary.
    Check the seasoning.
    Chill until required.
    Serve with raw vegetables or tortilla chips.
    Makes about 2 cups.
