Golden Door Cheesecake - cooking recipe
Ingredients

1 c. part-skim Ricotta cheese
1 c. low-fat cottage cheese
1/2 c. sugar
2 eggs or equivalent of no cholesterol egg substitute
1/3 c. unflavored low-fat yogurt
1/2 tsp. vanilla
1 tsp. finely grated lemon peel
1 Tbsp. flour
1 1/2 tsp. cornstarch
1 c. fresh raspberries, strawberries or mixed fruit pieces
Preparation

With blender or food processor, puree Ricotta cheese, cottage cheese, sugar, eggs or substitute, yogurt, vanilla and lemon peel until smooth and thick.
Blend in flour and cornstarch well.
Pour into an 8-inch spring-form pan that has been sprayed with nonstick cooking spray.
Bake about 35 minutes in a preheated 350\u00b0 oven or until toothpick inserted in center comes out clean.
Chill until cold; decorate with choice of fruit.
Yield:
12 servings.
