Ingredients

2 Tbsp. oil
1 to 2 zucchini, sliced
1/3 c. chopped green pepper
2/3 c. sliced carrots
1 lb. fresh mushrooms, sliced or 1 (8 oz.) can sliced
1/3 c. sliced celery
1 c. fresh chopped broccoli
1 c. chopped cauliflower
1 small chopped onion (optional)
1 (16 oz.) can tomato sauce
1 small can tomato paste
1 c. water
1 tsp. dried oregano
1 tsp. basil
1/4 tsp. marjoram
1 clove garlic, crushed
1/4 tsp. salt
16 oz. Mozzarella cheese
Preparation

Saute vegetables for 7 minutes in hot oil.
Add the following to the sauteed vegetables and simmer 20 minutes: tomato sauce, tomato paste, water, dried oregano, basil, marjoram, garlic and salt.
Pour into 9 x 13-inch pan.
Sprinkle with Mozzarella cheese.
Place in 400\u00b0 oven just to melt cheese while preparing batter.
