Frittata O'Brien - cooking recipe

Ingredients
    1 1/2 cup frozen Potatoes O'Brien (about 6 - 7 ounces)
    1/4 teaspoon salt
    1/4 c. (1 ounce) shredded cheese (cheddar, american, monterey jack)
    1 tablespoon butter
    4 eggs
    1/4 cup water
Preparation
    Melt butter in an 8 inch iron skillet over medium heat.
    Add potatoes and cook until lightly browned, stirring occasionally, about 5 to 7 minutes.
    In a small bowl, beat together eggs, water, and salt and pour over potatoes.
    Cover and cook over low heat until eggs are almost set, about 4 to 5 minutes.
    Sprinkle with cheese.
    Place under broiler about 6 inches from heat until eggs are completely set and cheese is melted, about 2 to 3 minutes.
    Cut into serving pieces.
    Makes 3 to 4 servings.
