Sausage Soup - cooking recipe
Ingredients

1 1/2 lb. good smoked sausage (do not use lightly smoked sausages like kielbasa)
1 large onion, chopped
diced potatoes, enough to fill 5-quart pot about half full
1 Tbsp. parsley
salt to taste
pepper to taste
Preparation

Place potatoes and onions into 5-quart pot; add parsley.
Add enough water to cover.
Slice sausage into thin, about 1/8-inch ringlets and add to potato mixture.
Bring mixture to a boil; lower heat and cook until potatoes are soft.
Season to taste with salt and pepper.
Remove from stove, cover and let stand 30 minutes before serving.
