Queen'S Sweet Potato Pie - cooking recipe

Ingredients
    pastry for 9-inch one-crust pan
    2 c. hot cooked mashed sweet potatoes (about 2 medium potatoes)
    3/4 c. sugar
    1 Tbsp. all-purpose flour
    1/2 tsp. baking powder
    1/2 tsp. ground nutmeg
    1/4 c. butter or margarine
    1 egg, slightly beaten
    1 Tbsp. lemon juice
    1 tsp. vanilla extract
    1 1/4 c. milk or evaporated milk
Preparation
    Heat oven to 425\u00b0.
    Prepare pastry.
    Combine sugar, flour, baking powder and nutmeg in medium mixer bowl; add remaining ingredients and beat until well blended.
    Place pastry-lined pie plate on oven rack; pour in filling.
    Bake 15 minutes.
    Reduce oven temperature to 350\u00b0.
    Bake until knife inserted in center comes out clean, about 45 minutes longer.
    Makes 1 pie.
