Rhubarb Salad - cooking recipe
Ingredients

2 c. diced rhubarb
3/4 c. sugar
1 Tbsp. gelatin
1/2 c. cold water
2 Tbsp. lemon juice
1/2 c. chopped nuts
1 c. diced celery
Preparation

Wash and cut rhubarb.
Add sugar; let stand for a few minutes. Heat slowly and simmer gently until rhubarb is tender but still keeps its shape.
Soften gelatin in cold water; add to hot rhubarb.
Heat until gelatin is dissolved.
Add few drops of red coloring, if desired.
Cool until mixture begins to thicken.
Add nuts, celery and lemon juice.
Pour into molds.
Serves 6.
