Potato Cheese Bake - cooking recipe

Ingredients
    6 medium potatoes
    20 oz. sour cream
    1 1/2 c. grated Cheddar cheese, divided
    1 bunch chopped scallions
    salt and pepper to taste
    bacon bits (optional)
    chives (optional)
    chopped green scallion tops (optional)
Preparation
    Boil potatoes in jackets until fork-tender.
    Refrigerate potatoes until cold (approximately 1 hour).
    Peel and grate cold potatoes.
    Add sour cream, 1 cup grated Cheddar cheese, scallions, salt and pepper.
    Put mixture in buttered casserole dish.
    Top with 1/2 cup grated Cheddar cheese and bacon bits.
    Chill for several hours.
    Bake at 350\u00b0, uncovered, for 35 to 45 minutes. Garnish with chives or chopped green scallion tops, if desired. Makes 6 to 8 servings.
    Great for crowds.
    Easy to make ahead of time!
