Cucumber Namasu - cooking recipe

Ingredients
    2 medium cucumbers
    1 1/2 c. white vinegar
    5 Tbsp. sugar
    1 tsp. salt
    1 tsp. finely chopped ginger root
Preparation
    Partly peel cucumbers, leaving narrow strips of peel.
    Thinly slice cucumbers.
    In a measuring cup or mixing bowl, combine vinegar, sugar, salt and ginger root; stir until sugar is dissolved.
    Pour over cucumber slices.
    Cover and chill thoroughly before serving.
    Makes 4 servings.
