Fried Rice - cooking recipe

Ingredients
    1/3 c. small fresh or frozen shrimp, shelled and deveined
    5 Tbsp. oil, divided
    2 eggs, beaten
    1/2 carrot, sliced
    1 medium onion, chopped
    1 green pepper, seeded and chopped
    4 c. cooked rice
    1 tsp. soy sauce
    salt and pepper
Preparation
    If using fresh shrimp, remove shell, devein and clean shrimp. If using frozen, defrost and drain; set aside.
    Heat 1/2 tablespoon oil in a wok or large skillet.
    Add beaten eggs and scramble over medium heat.
    Remove from wok or skillet; cover and set aside. Add 1/2 more tablespoon oil and fry shrimp for 8 minutes if raw and 4 minutes if wholly or partially cooked.
    Add vegetables together about 2 minutes.
    Remove shrimp and vegetables; put in a covered container with the eggs to keep warm.
    Heat remaining 4 tablespoons oil in wok or skillet; add the cooked rice.
    Fry over high heat until coated with oil.
    Return vegetables and eggs to wok.
    Stir; add soy sauce, salt and pepper to taste.
    Serve immediately.
    Makes 6 servings.
