Creamy Rice Pudding - cooking recipe

Ingredients
    1 c. long grain rice, rinsed
    1/2 c. brown sugar
    3 1/2 c. hot milk
    1 Tbsp. grated lemon rind
    1/4 c. sultana raisins
    1/2 c. light cream
    2 Tbsp. mixed candied fruit
    1 Tbsp. cinnamon
    1 beaten egg
Preparation
    Place rice in 12-cup casserole and sprinkle in sugar.
    Mix in milk and lemon rind.
    Cover and microwave 18 minutes at Medium-high, stirring twice.
    Add raisins, cream, fruit and cinnamon; mix well.
    Continue microwaving 19 minutes, covered, stirring occasionally.
    Add egg, mix well and finish microwaving 2 minutes at low, uncovered.
    Serve plain or drizzled with maple syrup.
