Chicken Cacciatora - cooking recipe

Ingredients
    1 clove garlic, chopped
    1 large onion, chopped
    2 Tbsp. vegetable oil
    4 to 5 chicken pieces
    1 (6 oz.) tomato paste
    1 c. hot water
    salt and pepper to taste
    1/2 c. sliced mushrooms
    1/2 c. tart red wine (optional)
Preparation
    Saute garlic and onion in oil.
    Push to side of pan.
    Add chicken and brown.
    Combine tomato paste, water, salt and pepper; pour over chicken mixture.
    Cover and simmer 45 minutes or until chicken is tender.
    Add mushrooms and wine (if desired). Cook 5 minutes more.
    Makes 4 servings.
