Pickled Zucchini - cooking recipe

Ingredients
    4 medium size zucchini (about 8 oz. each)
    1 large onion
    2 c. sugar
    2 c. distilled white vinegar
    2 Tbsp. pickling spice
    4 bay leaves
Preparation
    Cut zucchini into 1-inch chunks and thinly slice onion.
    In 2-quart saucepan, heat sugar, vinegar, pickling spice and bay leaves to boiling.
    Add sliced onion.
    Cook for 1 minute.
    Place zucchini in small glass jars or plastic container.
    Pour liquid over and refrigerate.
    Drain before serving.
    Serve with grilled steak, chicken or hamburger.
    Makes about 8 cups.
