Hot Potato Salad - The Hofbran Haus Way - cooking recipe
Ingredients

6 large potatoes, cubed and cooked
8 bacon slices
3 Tbsp. flour
6 tsp. onions, chopped
2/3 c. water
2/3 c. vinegar
4 tsp. salt
1/4 c. sugar
1/2 tsp. ground pepper
1 tsp. dry mustard
1/2 tsp. rosemary, crumbled
1/2 tsp. parsley flakes, chopped
Preparation

Fry bacon until crisp.\tRemove from pan; drain and crumble. Saute onions in bacon fat until glossy (do not brown).
Turn off heat.
Stir in flour, then heat until light yellow.
Stir in water and vinegar.
Add sugar, salt and spices.
Cook until mixture is of medium thickness.
Add potatoes, crumbled bacon and parsley.
Mix carefully to prevent mashing potatoes.
Yield:
6 to 8 servings.
