Zucchini Casserole - cooking recipe

Ingredients
    3 lb. zucchini
    1 large chopped onion
    1 tsp. Italian seasoning
    1 qt. tomatoes
    2 to 3 c. grated Mozzarella and Cheddar cheese
Preparation
    Stir-fry zucchini, onion and Italian seasoning in hot oil for 5 to 10 minutes.
    Add tomatoes and cook down, 5 to 10 minutes. Sprinkle on more seasonings, salt and pepper.
    Transfer vegetables to a casserole dish; top with cheese.
    Bake at 350\u00b0 for 30 minutes, until bubbly and brown.
