Bean Chalupa - cooking recipe

Ingredients
    1 lb. pinto beans
    3 lb. pork roast
    7 c. water
    1/2 c. chopped onions
    2 cloves minced garlic
    1 Tbsp. salt
    2 Tbsp. chili powder
    1 Tbsp. cumin
    1 tsp. oregano
    1 (4 oz.) can chopped green chilies
Preparation
    Place all ingredients in a heavy kettle or slow cooker.
    Cover kettle and simmer about 5 hours or until roast falls apart.
    Cook in a slow cooker overnight and all the next day.
    Break up roast into bite-sized pieces.
    Uncover and cook until thick, about 1/2 hour.
    Serve over chips and top with cheese, lettuce, tomatoes, sour cream and more.
    Serves 10.
    Freezes well.
