Poulet Grille Farci Au Citron(Lemon Broiled Chicken) - cooking recipe

Ingredients
    1 chicken, fryer or broiler (about 3 lb.)
    salt and pepper
    6 Tbsp. butter
    2 lemons
    2 c. soft bread crumbs, made from day old bread
    2 Tbsp. chopped parsley
    1 tsp. dried tarragon
    2 Tbsp. chopped green onions or chopped onions and chives
Preparation
    Wipe the chicken carefully and split it in two; use a good sturdy knife, insert the point at the tip of the breast and press down firmly with both hands.
    Quite easy really!
    Rub both pieces well with salt and pepper and about 1 tablespoon of butter.
    Place rather low under the preheated broiler and cook, basting frequently with a little butter and lemon juice, until it turns a beautiful golden color.
    About 15 minutes should do it.
