Spinach Balls - cooking recipe

Ingredients
    4 large eggs
    2 (10 oz.) pkg. frozen spinach, cooked and drained
    1 c. minced onion
    3/4 c. melted butter
    1/2 tsp. thyme leaves
    1/4 tsp. ground nutmeg
    3/4 c. grated Parmesan cheese
    1/2 tsp. salt
    1/4 tsp. black pepper
    2 1/2 c. crumb herbed stuffing mix
Preparation
    Beat eggs in a large bowl.
    Stir in remaining ingredients except stuffing mix.
    When well blended, stir in stuffing mix and let stand 20 minutes while mixture firms slightly.
    Shape into rounded teaspoon and arrange on ungreased cookie sheet.
    Heat oven to 350\u00b0.
    Bake 20 minutes, until hot and slightly browned.
    May be cooled, wrapped and frozen.
    Just reheat on a baking sheet 10 to 15 minutes at 350\u00b0.
    Makes about 112 balls.
