Baked Lemon Chicken Oregano - cooking recipe

Ingredients
    1 roasting chicken or 2 whole or disjointed
    1/4 lb. butter
    1/4 c. oil
    2 tsp. salt
    1/8 tsp. pepper
    1 Tbsp. oregano
    2 lemons (juice only)
    3 c. boiling water
    2 Tbsp. flour or cornstarch
Preparation
    Wash chicken.
    Heat butter and oil together.
    Pour half of it into a shallow baking pan.
    Spread to cover bottom.
    Lay chicken in pan.
    Sprinkle with salt, pepper and oregano.
    Mix remaining butter mixture with lemon juice.
    Baste chicken.
    Bake 1 1/2 hours at 375\u00b0, basting at 3 or 4 times during baking.
    Add boiling water to drippings in pan; mix.
    Dilute flour or cornstarch in 1/2 cup cold water and stir into pan.
    Bake 5 minutes at 475\u00b0.
    Serve separately as sauce for mashed potatoes or rice pilaf.
    May boil potatoes or rice and bake with chicken for 1/2 hour.
