Veggie Rice - cooking recipe

Ingredients
    1/3 - 1/2 c. each green onions, carrots and celery (optional), finely chopped
    1 c. white long grain rice
    1 3/4 - 2 c. chicken broth (Swanson's Fat Free or homemade)
    1/2 tsp. salt
    2 1/2 tsp. olive oil
    lemon pepper to taste
Preparation
    Put oil in saucepan on medium/high heat.
    Stir in vegetables and rice.
    Stir 2 to 3 minutes until well coated (not brown).
    Add broth and bring to a boil.
    Turn to low and cover with lid.
    Cook 15 minutes and then turn off stove.
    Leave pot on stove eye at least 15 more minutes).
    Fluff with fork and add lemon pepper to taste.
