Anne'S Eggplant Casserole - cooking recipe

Ingredients
    1 medium onion, chopped
    1 small eggplant, cubed (peeled or not)
    garlic salt to taste
    oregano to taste
    dried red/green peppers to taste
    1 vegetable bouillon cube
    2 tsp. seedless raisins
    1 tsp. brown sugar
    1 (1 lb.) can tomatoes (1 1/2 c.), chopped
    1 c. raw rice
Preparation
    Saute chopped onion until transparent, in oil.
    Add eggplant and stir well.
    Cover and simmer 10 minutes.
    Add seasonings, raisins, sugar and the can of tomatoes with juice.
    Simmer 5 to 10 minutes, then pour into a casserole dish and put into a 325\u00b0 oven for about 1 hour to thicken and bring it all together. Meanwhile, put the rice on to cook.
    Serve over the hot rice.
