Quick Oatmeal Bread - cooking recipe
Ingredients

2 pkg. yeast
1/2 c. water
1 1/2 c. boiling water
1 c. quick cooking oats
1/3 c. shortening
1/2 c. light molasses
3 tsp. salt
2 beaten eggs
5 1/2 c. sifted flour
Preparation

Dissolve yeast in 1/2 cup warm water (110\u00b0).
Combine 1 1/2 cups water, oats, shortening, molasses and salt.
Cool to lukewarm.
Add softened yeast; mix well.
Blend in eggs.
Add flour; mix thoroughly until dough is blended.
(It will be softer than kneaded dough.)
Place in a greased bowl; turn once to grease surface.
Cover.
Store in refrigerator at least 2 hours.
Shape in 2 loaves on well floured surface; place in greased 9 x 5 1/4 x 2 3/4-inch loaf pans; cover.
Let rise in warm place (80\u00b0 to 85\u00b0) until double, about 2 hours.
Bake at 375\u00b0 for 1 hour.
