Baked Eggplant Slices - cooking recipe

Ingredients
    2 medium sized eggplant
    1 egg
    1/4 c. milk
    1 c. crushed dry cereal flakes
    1 tsp. salt
    1/8 tsp. pepper
    3 Tbsp. butter or margarine
Preparation
    Peel eggplant and slice 1/2-inch thick.
    Beat egg and add milk; dip slices into egg and milk mixture and cover slices well with cereal flakes.
    Sprinkle with salt and pepper.
    Heat butter or margarine in large shallow pan.
    Place slices in pan and bake at 450\u00b0 for 10 minutes.
    Turn slices and bake for 5 minutes or until tender.
    Serves 6.
