Stir-Fried Chicken With Broccoli And Peanuts - cooking recipe

Ingredients
    1/4 c. vegetable oil
    2 c. broccoli florets
    2 medium carrots, sliced
    1 celery rib, sliced
    3 scallions, sliced
    1 garlic clove, crushed
    1 tsp. grated fresh ginger
    1 1/2 lb. skinless, boneless chicken breasts, cut into 1/2-inch chunks
    1 (14 1/2 oz.) can chicken broth
    1/4 c. dry sherry
    2 Tbsp. soy sauce
    1 c. long grain wild rice
    1/2 c. dry-roasted peanuts
Preparation
    In a wok, heat 2 tablespoons oil over high heat until hot, swirling to coat sides of pan.
    Add broccoli, carrots, celery, scallions, garlic and ginger; stir-fry until crisp-tender, 4 to 6 minutes.
    Remove to bowl.
