Sweet And Sour Fish Fillets(Microwave) - cooking recipe

Ingredients
    1 lb. fish fillets (fresh or defrosted)
    3 Tbsp. brown sugar
    1 Tbsp. cornstarch
    1 tsp. chives
    1/4 tsp. dry mustard
    1 (8 oz.) can pineapple chunks, drained and juice reserved
    2 Tbsp. vinegar
    1 Tbsp. soy sauce
    1 (1 1/4 oz.) pkg. cashews
Preparation
    Arrange fillets in a 12 x 8-inch baking dish.
    Cover with vented plastic wrap; microwave at High 6 to 7 minutes, or until fish flakes easily, rotating dish 1/2 turn after half the cooking time.
    Set aside.
    In a 1-quart casserole, combine brown sugar, cornstarch, chives and dry mustard.
    Stir in pineapple juice, vinegar and soy sauce.
    Microwave at High 1 1/2 to 2 minutes, or until thickened, stirring once or twice during cooking.
    Stir in pineapple chunks and cashews.
    Drain fish well.
    Spoon sauce over. Microwave, uncovered, at High 1 to 2 minutes, or until thoroughly heated.
    Serves 4.
