Ensalada De Legumbres - cooking recipe

Ingredients
    1/4 lb. sweet or hot Italian sausage
    1 1/2 c. cooked green beans
    1/4 c. snipped parsley
    4 c. torn lettuce
    1 Tbsp. vinegar
    1/8 tsp. pepper
    10 oz. canned or frozen corn, cooked
    3 medium tomatoes, sliced
    1/4 c. snipped scallions
    2 Tbsp. olive oil
    1/2 tsp. salt
    1/2 small clove garlic, minced
Preparation
    Saute sausage in a skillet until light brown. Drain on a paper towel.
    Cool.
    Crumble.
    Place in a large bowl with corn, green beans, sliced tomatoes, parsley, scallions and lettuce. Refrigerate until serving time.
    In a small bowl, beat together olive oil, vinegar, salt, pepper and garlic.
    Just before serving, pour over salad and toss well.
    Yields 6 to 8 servings.
