Hearty Beef Goulash Soup - cooking recipe

Ingredients
    6 small red potatoes, unpeeled
    1 medium onion
    2 Tbsp. olive oil
    2 cloves garlic, minced
    1/2 lb. ground round
    3 c. tomato juice
    1 3/4 c. beef broth
    2 tsp. paprika
    1/2 tsp. pepper
    1 small green bell pepper
    1 small red bell pepper
Preparation
    Dice potatoes; coarsely chop onion.
    Warm oil in large saucepan; saute onion and garlic for 1 to 2 minutes.
    Crumble ground beef into pan and brown; drain off grease.
    Add tomato juice, broth, paprika, pepper and potatoes.
    Bring to boil, reduce heat to medium-low, cover and simmer for 10 minutes; stir occasionally.
    Dice peppers.
    Stir peppers into soup and cook until potatoes are tender, 10 to 15 minutes.
